The Herb N’ Kitchen design is clean, casual, and handcrafted, with natural stone, handcrafted furnishings and hand-forged fixtures reinforcing the concept strategy and menu. Herb N’ Kitchen is scalable within itself, enabling the property to expand or contract required zones based on its needs and existing conditions. It is not only scalable given the zones and optional components, it is scalable within itself through the use of sliding doors and dining controls.
For even more flexibility, Herb N’ Kitchen offers multiple a la carte design options, including an indoor “farmer’s market” and the creative use of space for additional seating, private dining, and events.
The plans have been designed in compliance with the 2010 ADA Standards for Accessible Design. The Architect of Record must note that additional accessibility requirements may also be required by state or local codes. These plans have not been designed to incorporate any of the more stringent requirements of state or local accessibility codes or standards and the plans must be modified to meet any such codes or standards.
The term “Accessible” will be used throughout these plans to refer to the 2010 ADA Standards for Accessible Design which are mandated for places of public accommodation by Title III regulations of the ADA at 28 CFR part 36, subpart D; and must follow the 2004 ADAAG at 36 CFT part 1191, appendices B and D.
The owner and Architect of Record must ensure that all modifications and changes to these plans meet or exceed the ADA and any state or local accessibility codes that are more stringent. The owner must also ensure that the facility is constructed and maintained in compliance with the ADA standards. These plans identify ADA minimum, maximum and dimensional ranges. Architects are strongly encouraged to specify dimensions that are below the maximum, above the minimum or in the middle of ranges to account for deviations that may occur during the construction process.

Power and Data receptacles provided for the use by guests and located within the seating areas should be mounted within the accessible reach range.
At least five percent of the total seating should be provided as accessible seating. Although the ADA Standards currently regulate built-in furniture only, Hilton intends to apply these standards to their loose furniture as well. Accessible seating must be dispersed through the dining areas across a variety of seating/table types to provide options for accessible dining.

Herb N' Kitchen is an innovative full-service concept that blends the features of an upscale restaurant with a grab and go, self-service feature and a gourmet market. Hilton offers two distinct service models for Herb N' Kitchen.
Full-service model is appropriate for larger hotels with ample square footage, includes Gourmet Marketplace, Market place Seating and Optional Restaurant Seating, Buffet and Bar Components.
Herb N' Kitchen Market is geared towards smaller properties. The Gourmet Marketplace concept is adjacent to the front desk with no seating.

The concept is not only scalable given the two Herb N' Kitchen tiers and optional components, it is scalable within itself: enabling the seating areas to expand and contract based on the need of the hotel.
Seating is designed for travelers and guests on the move with various seating types that allow users to sit in larger groups or solo, all while staying connected. Sufficient power and Wi-Fi accessibility is critical.
With its own entrance for quick coffee drinks in the morning and an area for pick-up, the Barista Station fills the lobby with seductive scent. Pastries, hot sandwiches, fruit, yogurts and the perfect macchiato are served by a well-trained staff. This space is designed to handle a large flow of guests coming throughout the day.
Where the brand pillar “Fresh” comes to life. The culinary team is on display at this beautifully designed gas-fired pizza oven, enticing guests to gather around this “kitchen.”
The Gourmet Market is “Grab and Go Central,” outfitted with coolers, hot holding equipment, and retail merchandising stations utilizing residential style furnishings.
Designed as a smaller and simpler version of Herb N' Kitchen with the same signature design elements to tie it to the concept. Positioned adjacent to the front desk. There are no required additional full-time employees to staff this reduced concept model.
An automatic machine allows guests to perfectly brew their own specialty coffees.
Included are the coolers, hot holding equipment, as well as 'retail' like merchandising moments utilizing residential-style furnishings.
Design approach much incorporate the required zones and defining design elements. However, further optional zones are provided that will allow the space to expand and contract as appropriate with the farm, restaurant and communal seating, private dining, buffet and bar add-on components.
Literally takes the guest into a farmers market, this area will feature fresh ingredients and is designed to offer made to order salads, sandwiches and other fresh moments.
