Wearing foodservice gloves.

Ingredients

3 ea. Bibb lettuce, washed, dried, leaves only
5 oz. Harvest Chicken Salad, sub recipe
3 ea. Parmesan crostini, sub recipe

Equipment

  • Foodservice gloves
  • To-go container
  • 1/2 sheet parchment
  • scoop

Preparation

  1. In the to-go container lay down the three leaves of bibb lettuce to span half of the container.
  2. Scoop the chicken salad and place on top of the bibb lettuce.
  3. Wrap the crostini in the parchment paper and place in the empty half, fold side down.
  4. Close container and store under refrigeration until ordered.
