Ingredients

1 ea. Crème Brulee Pudding, sub recipe
2 Tbsp. Sugar In the Raw
1 ea. Mint Leaf, fresh, washed, dried

Equipment

  • Foodservice gloves
  • Torch

Preparation

  1. Sprinkle sugar evenly on top of Crème Brulee Pudding
  2. Then, with torch on medium, caramelize sugar until golden brown color, not burnt.
  3. Once pudding has cooled for 20 minutes, and caramel has hardened, place 1 mint leave on top and cover with lid.
