Ingredients

8 ea. Cherry, Dark, in Simple Syrup, sub recipe
6 oz. Chocolate Pots de Crème, sub recipe
1 oz. Rich's Whip Cream, in pastry bag, spec
1 ea. Mint Leaf, fresh, washed, dried

Equipment

  • 4 oz. Ladle
  • Foodservice gloves
  • Squat parfait cup
  • Slotted spoon

Preparation

  1. Place 8 cherries in the bottom of the parfait cup.
  2. Put one 4 oz scoop of the warm chocolate pots de creme mixture on top of the cherries. (6oz by weight, 4oz by volume)
  3. Put one round dollop of Rich's whip cream in center of chocolate pudding.
  4. Put one mint leaf in the center of the whip cream. Place lid on top.
