Ingredients
8 | ea. | Cherry, Dark, in Simple Syrup, sub recipe |
6 | oz. | Chocolate Pots de Crème, sub recipe |
1 | oz. | Rich's Whip Cream, in pastry bag, spec |
1 | ea. | Mint Leaf, fresh, washed, dried |
Equipment
- 4 oz. Ladle
- Foodservice gloves
- Squat parfait cup
- Slotted spoon
Preparation
- Place 8 cherries in the bottom of the parfait cup.
- Put one 4 oz scoop of the warm chocolate pots de creme mixture on top of the cherries. (6oz by weight, 4oz by volume)
- Put one round dollop of Rich's whip cream in center of chocolate pudding.
- Put one mint leaf in the center of the whip cream. Place lid on top.
