| 4 | c. | Sugar, white granulated |
| 4 | c. | Water, tap |
| 3 | lbs. | Cherries, Dark IQF, pitted, thawed |

Preparation
1. Boil sugar and water in a pot until the sugar is completely dissolved.
2. Pour the simple syrup over the cherries in a plastic storage container. Allow to stand overnight before using.
3. Cover and refrigerate for one day before using.
