Notes
Wearing foodservice gloves. Preheat grill, half throttle to reach 500°F.
Merry Chef Setting: 45 seconds at 475°F with fan at 100% and microwave at 25%. |

Ingredients
1 | ea. | Beef patty, raw, 7 oz. |
½ | tsp. | Roasted garlic puree, sub recipe |
3 | tbsp. | Tomato jam, sub recipe |
1 | ea. | Grilled onion, sub recipe, quartered |
1 | ea. | Bibb lettuce, washed, dried, leaves only, no brown spots |
1 | ea. | Brioche burger bun |
Salt and pepper to Taste |

Approximate Cook Times and Temperatures for Burgers
Rare: 5 to 6 minutes
Medium Rare: 6 to 7 minutes
Medium: 7 to 8 minutes
Medium Well: 8 to 9 minutes
Well: 9 to 10 minutes
Rare: 5 to 6 minutes
Medium Rare: 6 to 7 minutes
Medium: 7 to 8 minutes
Medium Well: 8 to 9 minutes
Well: 9 to 10 minutes
Preparation
- Season the beef patty with salt and pepper on each side and place on a well heated grill to cook. Continue to cook until the proper internal temperature is met.
- Once the burger has finished cooking, remove and let rest on a cutting board.
- Meanwhile, working quickly, place the brioche burger bun on a mesh Merry Chef rack, cut side up, and place in the Merry Chef and use the appropriate setting.
- Remove bun from oven with caution and smear ¼ teaspoon of roasted garlic puree on each exposed, toasted half.
- On the bottom bun place the quartered rings of grilled onion followed by the bibb lettuce.
- Place down the cooked burger next, followed by the tomato jam and finishing with the top bun.
