Wearing foodservice gloves.

Ingredients

1 ea. Manchego, sliced into 1 ounce wedges
1 ea. Tallegio, sliced into 1 ounce pieces
1 ea. Fourme d'Ambert, sliced into 1 ounce wedges
5 ea. Roasted almonds, sub recipe
6 ea. Cranberries, dried, sweetened
1 tsp. Honey
1 tsp. Fig Preserve
3 ea. Parmesan Crostini, sub recipe

Equipment

  • Foodservice gloves
  • To-go salad container

Preparation

  1. On one half of the to-to container place the crostini.
  2. In the second half of the container place the cheese in a stop light fashion starting with the Fourme d'Ambert garnished with Fig Preserve.
  3. Followed by Tallegio with Almonds pressed in to the cheese itself
  4. Ending with Manchego drizzled with the honey and topped with cranberries.
  5. Close the container with the lid and serve immediately.
