Ingredients
1 | ea. | Pumpernickel Bread, slice |
2 | ea. | Salmon, biased cut, 2 oz. each, spec |
1 | oz. | Cilantro Topping, sub recipe |
2 | oz. | Red Onion and Orange Slaw, sub recipe |
6 | ea. | Cilantro, washed, dried, leaves |

Preparation
- Cut the pumpernickel bread in half lengthwise.
- On a Merry Chef oven mesh tray, place a quarter of a sheet of parchment with the two salmon filets side by side. On the side that is not covered with the parchment place the pumpernickel bread.
- Place product in the Merry Chef and use the setting noted above.
- When finished, remove from the oven carefully and place on a heat resistant surface.
- On the toast place ½ ounces of cilantro topping on each half and place in the container resting as show in the photo.
- Next place the reheated salmon filets draped over top of the toasts, finishing with the slaw as shown in the photo and garnish with the cilantro leaves.
- Cover and serve immediately.
