Notes

Merry Chef setting: 45 seconds at 475°F with 100% fan and 45% microwave

Wearing foodservice gloves.

Ingredients

1 ea. Pumpernickel Bread, slice
2 ea. Salmon, biased cut, 2 oz. each, spec
1 oz. Cilantro Topping, sub recipe
2 oz. Red Onion and Orange Slaw, sub recipe
6 ea. Cilantro, washed, dried, leaves

Equipment

  • Foodservice gloves

Preparation

  1. Cut the pumpernickel bread in half lengthwise.
  2. On a Merry Chef oven mesh tray, place a quarter of a sheet of parchment with the two salmon filets side by side. On the side that is not covered with the parchment place the pumpernickel bread.
  3. Place product in the Merry Chef and use the setting noted above.
  4. When finished, remove from the oven carefully and place on a heat resistant surface.
  5. On the toast place ½ ounces of cilantro topping on each half and place in the container resting as show in the photo.
  6. Next place the reheated salmon filets draped over top of the toasts, finishing with the slaw as shown in the photo and garnish with the cilantro leaves.    
  7. Cover and serve immediately.
