Preparation
Preheat a convection oven to 200 degrees Fahrenheit.
- In a large mixing bowl toss the halved compari tomatoes with tomato seasoning heavily. The seasoning will coat well but not drowning in it.
- Put the seasoned tomatoes cut side facing up on a sheet tray lined with a silpat.
- Put in a convection oven with low fan for 2 hours.
- Once 2 hours has passed turn the oven to 350 degrees for 18 minutes until the tomatoes have colored slightly.
- Cool down at room temperature until cool to the touch. Over night if at all possible.
- Store in an air tight container under refrigeration until ready to use.
