Ingredients
5 | lb. | Garlic Cloves, peeled, raw |
3 | oz. | Blended Oil, canola and olive oil |
2 | tbsp. | Salt, kosher |
Equipment
- Sheet Tray
- Silpat
- Mixing Bowl
- Spatula
- Air tight container
- Food processor
Preparation
Wearing foodservice gloves.
- Combine all ingredients and mix well.
- Place on a sheet tray lined with a silpat.
- Roast in preheated oven until tender about 1 hour. If more time is needed, extend.
- Remove from oven and cool at room temperature.
- In a food processor, pulse until smooth.
- Store under refrigeration in an air tight container until ready to use.
