Ingredients

5 lb. Garlic Cloves, peeled, raw
3 oz. Blended Oil, canola and olive oil
2 tbsp. Salt, kosher

Equipment

  • Sheet Tray
  • Silpat
  • Mixing Bowl
  • Spatula
  • Air tight container
  • Food processor

Preparation

Wearing foodservice gloves.

  1. Combine all ingredients and mix well.
  2. Place on a sheet tray lined with a silpat.
  3. Roast in preheated oven until tender about 1 hour. If more time is needed, extend.
  4. Remove from oven and cool at room temperature.
  5. In a food processor, pulse until smooth.
  6. Store under refrigeration in an air tight container until ready to use.
