Ingredients

1 lb. Tomatoes, fire roasted, canned
8 oz. Bacon, cooked, broken pieces
2 lg. Garlic cloves, whole stemmed
½ c. Olive Oil, blend
2 tbsp. Vinegar, red wine
4 tsp. Vinegar, balsamic
2 tsp. Paprika, smoked
2 tsp. Salt, kosher
2 tsp. Pepper, black rest. grind
1 tsp. Chili flakes, crushed

Equipment

  • Food processor
  • Knife
  • Foodservice gloves
  • Cutting board
  • Air tight container

Preparation

Wearing foodservice gloves.

  1. Place all ingredients in a food processor, pulse until somewhat smooth but still chunky.
  2. Place in an air tight container and refrigerate until needed.
